This inspired us to tackle the leather industry with a more sustainable approach: SCOBY (symbiotic culture of bacteria and yeast). SCOBY contains lactic acid bacteria, acetic acid, bacteria, and yeast, and forms a bacterial cellulose membrane by tangling secreted cellulose fibrins.
